Cinnamon Vanilla Whole Wheat Waffles
- 1 1/3 cups whole wheat flour
- 3/4 teaspoon salt
- 2 teaspoons baking powder
- 2 Tablespoons granulated sugar
- 1 teaspoon cinnamon
- 1 cup milk
- 2 eggs, separated
- 4 Tablespoons (1/4 cup) canola or vegetable oil
- 2 teaspoons vanilla extract
Combine flour, salt, sugar, and cinnamon in a small bowl; set aside. Beat egg whites until stiff peaks form; set aside. Beat egg yolks well; add in milk and oil. Add dry ingredients to egg, milk, oil mixture. Beat until smooth. Fold in egg whites. Sift baking powder over mixture and blend in quickly. Bake in hot waffle iron. Below is my waffle iron, I get 10 waffles out of this recipe (2 at a time, as you can see). Top with your favorite fruit and powdered sugar for a light, fresh taste, or go all out with butter and syrup!

Yum, yum, yum! I love whole-wheat things, and I never even considered it for waffles and pancakes and the like. Awesome!
P.S. Is that your table runner in the background of the last pic? It's so pretty!

Although he's happy the kids like to eat healthy, my husband can hardly stand that they ask for whole wheat and whole grain pancakes and waffles :0) That is a tablecloth for a 52" square table that I just put in the center of my table. It leaves some wood on each side, but looks nice I think. It is a strawberry print with blue and red checked sections and a blue edge. It just screams warm weather :0)
